  2. 1 cup maida
  3. Pinch salt
  4. 1/4 tsp vinegar
  5. as required Water to Knead dough
  6. as required Momos Filling-
  7. 100 gms cabbage grated Or chopped
  8. 50 gms carrot grated Or chopped
  9. 1 capsicum, chopped
  10. as required Paneer as per your wish
  11. 3-4 garlic cloves
  12. As per taste Salt
  13. 1/2 tsp Black salt
  14. 1/4 tsp black pepper
  15. 1/2 tsp lemon juice
  16. for Momo Marination-
  17. 1 cup curd
  18. 2-3 tsp kashmiri lal mirch
  19. as per taste Salt
  20. 1/2 tsp achar masala
  21. 1 tsp ginger garlic paste
  22. 1/2 lemon juice
  23. 1/4 tsp black salt
  24. 1 tsp kasuri methi
  25. 1 tsp tandoori masala
  26. 1-2 tsp mustard oil (hot)
  27. For Tandoori Effect-
  28. 1 pc charcoal
  29. 1/2 tsp oil
  30. For Tandoori Momos-
  31. as required Fried momos
  32. 1 Capsicum cut into big pcs
  33. 1 Onion cut into big pcs

Steps to make to make Tandoori Achari Momos

  1. First mix all ingredients from marination section apart from oil.
  2. Now heat the oil and add into curd. Keep it aside for almost 30 minutes. (You can keep for more time it will taste good) I kept for almost 3-4 hours.
  3. Dough - mix all the ingredients from momos dough section, and slowly add water and make a soft dough. Keep it aside for 30 mins.
  4. Momos filling - first add lil salt in cabbage and keep it for 10 minutes.
  5. After 10 minutes, remove extra water and mix carrot, paneer capsicum and all masala from filling section.
  6. Now take small pc from dough and roll it.. On the corner apply water. Fill the stuffing. Give shape.
  7. Fry them till 60-70%.
  8. Place all fried momos, capsicum and onion in marination.
  9. Now place one bowl in center of the marinated momos and heat charcoal and place in bowl and immediately add lil oil and cover it for 2 minutes. (I didn't get charcoal so I used coconut shell, I didn't get exact smoke but taste is same)
  10. Now arrange them in tandoori sticks and roast them.
  11. Enjoy your Hot Achari Tandoori Momos!!!
